You know those vegetables from those Japanese restaurants where they cook in front of you? Let’s cook that. My husband’s FAVORITE.
(Print-friendly recipe down at the bottom.)
Gather up these ingredients:
* 1 onion
* 1 zucchini
* about 2 T of oil of choice (I used EVOO but sesame would be yummy, too!)
* couple of splashes of soy sauce (I used low sodium and it’s plenty salty for me)
* sesame seeds
Heat up the oil in the pan. I like to use a $5 Ikea wok because it’s easy but any frying pan would work. While the oil is heating, chop up the onion and throw it in. Let those onions cook down while you chop the zucchini. After about five minutes, throw in the zucchini and a couple of splashes of soy sauce. Let it cook down until all the veggies are soft. It usually takes about three more minutes for me. Sprinkle in some sesame seeds and plate it up! So easy!
This would go great with some fried rice!
Or corn on the cob and green beans because there are no rules. And an all veggie dinner makes you feel good about yourself.
Easy, yummy veggies that anyone will eat. Try it! This recipe is easy to modify using whatever veggies you like!
