Do you love Panera Bread as much as I do? Every single time I go there, I always get the tomato and mozzarella sandwich. Always. Since trying to eat more plant-based foods, mozzarella isn’t really on the eatable list. But that’s okay, because recreating the tomato and mozzarella at home is super easy! And vegan!
:: Olive Oil
:: Ciabatta Roll
:: Fresh Tomato
:: Basil Pesto
:: Shredded Cheese (I used Daiya…it’s vegan)
:: Heat a bit of olive oil in a frying pan
:: Spread some basil on one or both side of bread
:: Place sliced tomatos on basil
:: Sprinkle cheese of choice on bread
:: Place in oil and heat until cheese is melty
:: Place sides of sandwich together and heat a little bit more
:: Plate, slice, and enjoy!
*Note: I accidentally grabbed an un-vegan pesto from the grocery store. I didn’t read the label closely enough. Next time, I’ll make my own pesto so I know exactly what’s in it.*
*Another note: I bought some ciabatta roles from our newly-opened Publix and they are SO GOOD! You can use whatever bread you’d like but these rolls were SO GOOD!*
*Third note (I know, I know): This would be awesome cooked in a panini press, George Foreman grill, or even a waffle maker! Use what you have!*
I have to say, this was amazing and I could have eaten about 10 of them! Go make one right now!
