A Farmer’s Life For Me…

Chicken Coop

Here’s some insight into my dream life.

* I really wish I could live in a earth-friendly house on a hill. Overlooking rolling pastures.

* I really want to keep bees. Like have hives with honey and a bee keepers hat and all that.

* I also want chickens to lay eggs in style in a chicken coop like this:

* I’ll take a Boston like one in the coop picture.

* Some goats running around eating grass and giving milk is a good idea.

* On my dream farm, there would be lots of deer but they would stay out of the garden.

* The garden would look something like this, except on a bigger scale:

* There would be so many eggs, goat’s milk, and veggies that we would get to give tons of it away! And there would be lots of canned vegetables. And canned veggie soup.

* Also, there would be a tire swing and a creek for our kids and their friends. But the tire swing wouldn’t swing out over the creek. Cause I’m not crazy.

Baby Afghan!

This blanket is the gift I gave to Kayla for her baby shower! Hopefully Baby Geanna will spend the next few years cuddled up with this blanket! :)

When I found out that Kayla was expecting, I knew I had to make her something special. If (hypothetically) my house was burning down and you told me I could save three things, one would be my baby afghan that was given to my mom before I was born. I knew that would be the perfect gift for Geanna.

This is my baby blanket. Its not really a boy or girl and its name is Woobie. It has been with me since I was born. It has been to countless summer camps, family vacations, to college and currently lives under my pillow. I know. Cute.

Anyhow, maybe the blanket I gave to Geanna will be her “Woobie.” :)

And for some more exciting news, you can have your own Woobie! Or whatever you want to call it. :) The pink and white blanket is listed in my Etsy shop as a custom order! I won’t make a blanket exactly like this one again…I like that it’s one-of-a-kind…but you can order it in any other colors or stripe combinations you can think of! Go check it out!

My grandmother gave Geanna a tutu that we made. She will look so cute in it! Geanna…not my grandmother. :) Although, my grandmother would look pretty cute in a tutu.

The tutu is not listed in my Etsy shop but if you’d like one, contact me for the sizes and the prices and I’ll be happy to make a custom one for you!

I can’t wait to meet this baby!

enchiladas

I made these enchiladas this week. Amazing. I posted the recipe here.

My cat caught this mouse at about midnight last Saturday night. It got away from him (I distracted the cat) and my husband trapped it in this rubbermaid container. We slapped the lid on it (REAL QUICK!) and let it go outside. After I got this picture, of course.

Snapped this sweet picture of Willow laying her head on my shoulder. There’s no dog ever as cute as my Willow. It’s true.

Willow the Digger. If she’s left outside too long she gets bored and she digs. And rolls. And digs some more. And then rolls in it again. Ugh. She got a bath right after this. She’s cute but she digs.

I love these up-close pictures of her sweet face. :)

Brain Dump

Willow Laying Funny

You ever need to do that? Just get out everything that’s floating around in your head? Well, here goes.

* I’m going to a baby shower this Saturday for my life long best friend. It’s crazy to think that we are old enough to have children but I’m so excited for her and her husband. They are going to make amazing parents to Baby Geanna! Also, I’m very excited about the gift I have for her. I’ll post pictures on here after Mommy gets the gift. :)

* My husband and I (and a few awesome friends) went to see The Dark Knight Rises in IMAX last Friday night. Oh. My. Word. So good!!! If you haven’t seen it, GO! If you have, you probably want to go again! I know I do but we’ll probably buy the Blu-Ray when it comes out. Cause we’re cheap and we love to watch movies over and over again. What did you think of the movie? Don’t post any spoilers!

* I just finished painting our dining room. We are renters and have been in this house for a couple of years but we’ve only painted the bathroom up until now. I love the new dining room! We had a can of grey paint in our storage room so I used that with some leftover white for the trim. I LOVE IT! So fresh and not icky off white that it was. A welcomed change, for sure!

* And I’ll leave you with a picture of the cutest li’l babe ever. How is that comfortable, Willow? She always lays like this. So weird.

Pinterest Project : Baked Chicken and Veggies

This is a recipe that I pinned a few days ago and as soon as I mentioned it to Cody, he got really excited! And that got me really excited!

The image on the left is the original and the one on the right is mine. I could not find an original source for this recipe. If you know where it came from, please let me know!

 

First off, I HATE cooking with raw, thawed chicken. I usually just buy it frozen, throw it in the crockpot, and then cook it and not have to worry about nasty raw chicken. But unfortunately, for this recipe, I had to handle it. Ick.

 

The directions are super easy. (These numbers coordinate with the picture because I’m prepared like that.)

1. Throw four to six raw (ick!) chicken breasts in a baking dish. (I used four cause they were huge!)

2. Add potatoes, cut up into pieces. (The original pic had red potatoes…I just used what I had on hand.)

3. Add green veggies. I used green beans like the picture. I LOVE green beans. I used canned green beans from the garden.

4. Sprinkle a packet of Italian Dressing Mix and a melted stick of butter over everything. Mmmmm butter…

5. Cover with foil and bake at 350 for an hour. (Not pictured, obviously.)

 

Review:

I thought this was a pretty good recipe. It was super easy and quick to throw everything together in one pan and throw in the oven. I really liked that. My only complaint is that the potatoes that were above the butter didn’t get completely soft like the ones swimming. That could have been because I forgot to cover it with foil. My bad.

The chicken wasn’t dry at all but also didn’t have a whole lot of flavor. Maybe next time I’ll marinate it in Italian dressing for the afternoon.

Overall, this recipe is a winner and I’ll probably make it again…if I can deal with the raw chicken… :)

Dream Home Inspiration: Flooring

reclaimed floors

I LOVE looking at flooring. It’s a sickness, really. And when I get to re-floor my dream home (someday, hopefully) I would love reclaimed wood flooring. Not only is it a great way to upcycle something that might go to a dump, but there’s no need to worry about it getting scuffed up and damaged. It’s already lived one life and often has the charming dings and scratches to show it!

Chicago! Part 2: Bubba Gump Shrimp Co. and the Boat Tour

When we were in Chicago for Cody’s business trip, we had a few hours to kill one evening so we took a free shuttle over to the Navy Pier.

While we were there, we ate at Bubba Gump Shrimp Co. We’d never eaten there (there’s not one near us) and it’s really not “Chicago” food but we love us some shrimp so we went for the first time. One word – YUMMY! Yes, all caps.

If you can’t guess from the name, the restaurant is themed after the movie Forrest Gump. At each table, they had these license plates on stands that you could put out to catch your server’s attention. Run if you didn’t need him. Stop if you needed something.

Also, I put a hurting on some hushpuppies and shrimp. I didn’t get a picture of the hushpuppies…we gobbled them up too fast. :)

After stuffing ourselves, we were walking out the pier and passed a ticket booth for the Architecture Boat Tour. We impulsively bought tickets and headed over to the dock. We had originally decided that the tickets were a little too expensive but then (at the last minute) decided that we didn’t want to miss out! So for the next hour, we floated on the river through the city and learned all about the architecture of Chicago from a tour guide. It was money well spent for sure! We are so glad we did it!

The best part for us is that we got on the 8:30 tour so we started the tour in the daylight and watched the sun set during our tour, seeing the city change from day to night. So cool! If you ever go to Chicago, take the boat tour! Too good to miss!

Yummy Enchiladas

Yummy Enchiladas: easy recipe!

{This is a really wordy post…skip to the very bottom for the recipe :) }

I’ve never made enchiladas before. We don’t eat Mexican food at home that much. The only reason for that is that we have a great Mexican place really close by that we eat at a lot. A lot. It’s special because with their chips and salsa, they serve this mystery white sauce that’s a.ma.zing. We always have to get an extra bowl when we go. And then I get a small quesadilla because by the time the entres get to the table, I’m pretty much full on chips and white sauce.

Anyhow. Back to the homemade enchiladas.

I didn’t follow a recipe for these…I just made it up as I went along. If you don’t know already, I barely ever follow recipes when I have them. If I do have a recipe, it’s almost a challenge to see how I can change it. I know. It’s a sickness. I can’t follow rules.

For this dish, I just used what I had in my cabinets. When I grocery shop, I tend to buy a few things that are on sale but I don’t really have a need for them. Is that hoarding? Well, I always end up using what I buy, I just don’t necessary know what I’ll do with them when I put them in my cart. I few weeks back I had picked up some enchilada sauce (even though I’ve never cooked enchiladas and didn’t really plan on cooking enchiladas so i’m not sure why I bought the sauce but I’m glad I did) and on another trip I had picked up some Rotel tomatoes with chilis because everyone needs Rotel in the cabinets at all times.

This dish was so super easy to make and my husband said it was yummy (he didn’t use that word) AND it’s decently healthy and pretty low calorie for a supper. No, I didn’t plan any of that. Well, the yummy part I did plan but sometimes that’s just up in the air.

Anyhow, on to the actual recipe.

This afternoon, I took four chicken breasts out of the freezer and threw them in the crockpot on high with some homemade taco seasoning, some cooked baked beans (also from my freezer) and a can of mexicorn. Another impulse grocery purchase that I’m glad I had on hand. I also put in a little water because I didn’t have any chicken broth.

I let that cook for about four hours on high and then turned off the crockpot and took off the lid so the chicken could cool a little. When it was cool enough to handle (and after I had played a couple of games of MW3 with my hubby) I shredded it. (Side note: This made waaaaaaaay more than eight enchiladas worth but I just wanted to cook up the last chicken in my freezer. I froze the extra cooked chicken, beans, and corn for soup later on.)

Next, I poured a can of red enchilada sauce into a Pyrex dish and sloshed it around a little to make sure it covered the bottom of the dish.

Then, I spooned a little chicken onto a soft taco-sized flour tortilla and then added some of the beans and corn from the crockpot. I used a slotted spoon for that so I didn’t pick up any water. Who wants a watery enchilada? Ick.

Then I added some cheese and rolled it up and put it in the baking dish right on top of the red enchilada sauce.

I did that with all eight tortillas and kind of squished them in the dish. They all fit nicely.

After they were all lined up in the dish, I poured a can of green enchilada sauce over them. Then I poured a can of Rotel tomatoes over that. Mmm. Then I poured the remainder of the shredded cheese on top of that. Mmmmm. Then I put it in my oven that I had preheated to 350 and warmed it for about 20 min, or until the cheese is melty and the sauce is bubbly. Mmmmmmm.

Then plate the enchiladas and devour. Well, that’s what happened in my house.

Cody ate two of them and I ate one and that was plenty for both of us. I froze the ones we didn’t eat so I can pull them out for another quick supper. The next time we have them, I’ll serve them with some salsa rice and maybe some lettuce and tomato. Ya know, like they do in restaurants. Tonight, I was just winging it and didn’t plan a side dish.

Yummy Enchiladas (that’s the official name now)

Yields 8 enchiladas

Ingredients:

4 chicken breasts (this will make extra chicken)
2 cups cooked black beans (again, more than you’ll need for this dish)
1 small can of Green Giant Mexicorn (yep, more than you’ll need)
3 Tablespoons of taco seasoning (more or less to taste)
a cup or so of water
8 tortillas
1 small can red enchilada sauce
1 small can green enchilada sauce
2 cups Mexican blend shredded cheese (this is a whole regular bag)
1 can Rotel tomatoes with green chilis

 

Directions:

::Place chicken, beans, and corn in crockpot and cook on high for 4 hours.

::After chicken is fully cooked, shred it.

::Preheat oven to 350. You might want to do this right before you shred the chicken, depending on your oven. Mine takes FOR.E.VER to preheat…

::Pour a can of red sauce in a baking dish, making sure that it covers the bottom.

::Fill tortillas with chicken, some beans and corn, and some cheese.

::Roll up and place in baking dish, seam side down.

::Repeat with all 8 tortillas.

::Pour green sauce over tortillas in dish.

::Pour Rotel over green sauce.

::Top tortillas with remaining cheese.

::Bake in preheated oven for about 20 min or until cheese it melted and sauce is bubbling a little.

::Enjoy!

Chicago! Part 1: Windmills

I have the best husband in the world! He got to go on a business trip to Chicago and he took me with him! So exciting! Neither of us had ever been to Chicago before so it was really an experience.

We spent two days on the road on the way up there and for us that equaled about 7 hours of driving time per day. A crazy long time in the car but going on road trips with Cody is one of my favorite things! We always seem to have fun stuff to talk about!

It was a really great drive up (except for getting caught in traffic once because of a really bad wreck…so sad) but we did see the craziest sight – windmills! And a LOT of them! Like hundreds!

Literally as far as the eye could see!

And the creepiest part is that they were all twirling at the same speed.

Some were way up close to the interstate…

And some were faaaarrrrr away off in the distance…

After being surprised by all of the windmills, we did some Google research and found out that these windmills are over 300 feet tall and each blade weighs 7 tons! Can you image having these monsters in your backyard?

Here they are…all lined up like an army!
